This is a dish which mum rustled up one day. I think it will go very well with the pulao I posted earlier.
Ingredients:
- 500gms, boneless chicken
- One big capsicum or two small capsicums (green bell pepper)
- Two medium size onions
- Two tomatoes
- One boiled egg
- 5or 6 cloves garlic
- One tablespoon ginger paste
Method:
- Cut chicken into pieces and boil the chicken
- Dice the capsicums
- Chop the onions into cubes
- Chop one tomato and leave aside the other tomato. It will be later used for garnishing the dish
- Finely chop garlic
- Heat 2 tablespoons of oil in a wok or vessel of your choice
- Add chopped tomato, onions, ginger paste, finely chopped garlic and salt to taste. At this stage, you may if you so desire, add a pinch of turmeric powder. Stir fry a bit
- Add the chicken. Stir well and add a little water. Cover and cook till water evaporates
- Just before removing from flame add capsicum and a teaspoon of freshly ground black pepper
- You may add chilli powder instead of ground black pepper
- However black pepper imparts a flavour which is quite different from chilli powder
- Remove from heat and pour out in a serving dish and garnish with boiled egg and tomato. Carve a flower out of the tomato as shown in photo
Thats an indian version of chicken stir fry.Looks yum with boiled eggs and tomatoes.

Shilpi I used fully cooked rice for that mint rice preparation.
